Most of us start out the New Year with resolutions to lose weight or eat healthier, yet many of us, me included, don’t make it very far. One of my goals was to start eating healthier and at home, rather than spending an enormous amount of money eating out, even if it was fast food, it still adds up. I’m pretty much a newbie, sadly, when it comes to cooking, but when I was given the opportunity to try Tropical Traditions Certified Organic Gold Label Virgin Coconut Oil, I decided here is my chance to start making good on my resolution. My Thoughts:
When the coconut oil arrived, I was a little puzzled. I was expecting it to look like regular vegetable cooking oil, but instead, it was a solid white oil. I quickly read the jar and found out that the coconut oil solidifies in temps cooler than 76 degrees, and that all I needed to do was submerse it in warm water for a bit. Tropical Traditions offers hundreds of free recipes at www.FreeCoconutRecipes.com, so I viewed the site and finally decided what to cook! I decided to try my hand at the coconut fried shrimp. The recipe was very easy to understand. My husband and I had then cooked our first sea food dish!!! Since it was coconut shrimp, I assumed it would be overwhelmingly “coconutty”, if that’s a word. Surprisingly, it was only slightly sweet with small hints of coconut. It wasn’t what I had imagined at all, especially with using shredded coconut and coconut cooking oil. I have to say, we really enjoyed it.
Since we were both surprised about the lack of overpowering coconut taste, I decided to use the coconut oil to cook over hard eggs to see if I could taste the coconut. Again, I was surprised. The eggs turned out beautifully, and I really couldn’t taste any coconut. I think Tropical Traditions Gold Label Virgin Coconut Oil is a great cooking oil and could probably be used to cook almost anything. Plus, cooking with it is a lot healthier than most regular oils.
